10/17/11 – No Mo' Suga!

Today marks the start of the second full week of the 908 Nutrition Challenge. We will now be excluding added sugar from our diet.  This will include but not be limited to soda, salad dressings, sauces, sweeteners, etc.  We will still be avoiding grains and legumes this week.  Please post your scores for Sunday as well as your week 1 total.  It looks as if everyone is doing really well! 1. +1 for both Saturday and Sunday. Saturday was tough with all that good non-primal food at the party…but I staved off my cravings and stuck to the definitely Primal offerings and liquid refreshments!

  2. +1 Saturday (thanks to that awesome paleo food)- I want the recipe for those almond crackers!
    +1 Sunday

    Sorry about the cupcakes!
The crackers were super easy to make
1-1/2 cup almond flour, 1/4 cup flax seed, 1/4 walnuts 2 egg whites and a little salt
Whisk eggs add the dry ingredients
roll out on parchment paper on a cookie sheet as thin as you can make it
bake at 350 for about 15-20 mins until slight color.

  7. +1 Sunday…

1 week full paleo, so far so good, can say I dont feel as hungry at I though i would. Getting better as I cook more things….made some of these coconut flower pancakes with blueberries, not bad….anyone got any ideas for a misses butterworth replacement…there a little dry.

  8. Hey Erik,

Try using some canned organic pumpkin (*not* pumpkin pie mix) or mashed bananas in your pancake mixtures…either one will add a bit of moisture, texture, and flavor. 🙂

Both Civilized Caveman and Fast Paleo have “pancake” recipes (actually, I think Paleo On Main might, too), but I’m pretty certain they all contain either honey or agave syrup. I know those of you doing the Nutrition Challenge are cutting out added sugars, so you may have to tweak a few things, but I hope that helps.

    Good luck!
