02/02/10 – Ned, Ned Ryerson?

PALEO CHALLENGE – Only two more days until the challenge ends.  Remember, the male and female winner will each receive a free unlimited month to CrossFit 908.  We will begin weigh-ins and measurements on Thursday and the winners will be picked by Saturday.  Make sure you are there at least one of those days.

CF 908 Night Out – Just a reminder that we will be going to Delicious Heights @ 8pm on Thursday night for some not-so-paleo treats.

Morning Classes – We have added another 6am class on Fridays.  We now have 6am classes Mon/Wed/Thur/Fri every week.

  1. As head cook in the Kelly household, I am always looking for new delicious recipes for Erin and Tim when they return after a hard workout at Crossfit908. Here’s one I adapted from a recipe I found online.

    Delicious CrockPot Paleo Pork Loin Dinner

    2-3 lbs boneless pork loin
    3 apples, cored, peeled, and sliced thickly
    1/2 cup apple juice
    1/3 cup honey
    1 tsp. ginger
    2 Tbsp. vinegar
    salt and pepper

    First, put the pork loin on a rack on a baking pan. Brown it in the broiler to get rid of some of the fat. (I even cut off some of the obvious fat.) The browned meat adds to the flavor later. Dispose of the fat.

    Put the apple slices in the bottom of a crockpot. Then put the pork loin on top of the apples. Combine the rest of the ingredients, and pour over the roast. Cover and cook on low for 10-12 hours.

    Serve with roasted vegetables, cauliflower “rice,” unsweetened applesauce.
