Try making your own. Google for simple recipes and techniques. Plus it is a lot cheaper and very bad ass.
If you remove the soy sauce I think you will need to replace the salt somehow. Salt is important as a microbial inhibitor. It is, i’m serious.

Yeah, a lot of beef jerky brands are flavored with soy sauce and other shit. :'( Also, for the “curing” process, many of them use evaporated cane juice or something along those lines.
Have you tried Steve’s Original Paleo Stix? They’re more like Slim Jims, but they’re pretty darn good, made out of grass-fed beef, and no sweeteners or soy…
